Tropical overnight oats

← Back to Resources

Five minutes the night before, and breakfast is ready: creamy oats with papaya, banana and a little crunch.

Serves: 1 · Time: 5 minutes, plus overnight

Ingredients

  • ½ cup old-fashioned rolled oats

  • ½ cup milk or unsweetened soy milk

  • ¼ cup plain Greek yogurt

  • 1 teaspoon chia seeds (optional)

  • ½ ripe banana, sliced, or ½ cup diced papaya

  • A few chopped macadamia nuts or walnuts

  • A pinch of cinnamon, and a drizzle of honey if you like

Steps

  1. In a jar or bowl, stir together the oats, milk, yogurt, chia seeds and cinnamon.

  2. Cover and refrigerate overnight, or at least 4 hours.

  3. In the morning, stir, then top with fruit and nuts. Enjoy cold, or warm it gently.

Tip: for a softer texture, chop the nuts finely or leave them out. If you're watching your blood sugar, skip the honey and choose berries.
