Sheet-pan salmon with sweet potato and greens

One pan, 25 minutes, and plenty of protein and color.

Serves: 2 · Time: about 30 minutes

Ingredients

  • 2 salmon fillets (about 4–5 oz each)

  • 1 medium sweet potato, cut into small cubes

  • 2 cups green beans or broccoli florets

  • 2 tablespoons olive oil

  • 1 lemon

  • ½ teaspoon garlic powder, plus a pinch of salt and pepper

Steps

  1. Heat the oven to 425°F. Toss the sweet potato with 1 tablespoon of oil and roast for 10 minutes.

  2. Add the green beans and salmon to the pan. Brush with the rest of the oil and sprinkle with garlic powder, salt and pepper.

  3. Roast another 12–15 minutes, until the salmon flakes easily.

  4. Squeeze lemon over the top and serve.

Tip: cut the vegetables small so they cook soft and are easy to chew.
