Tofu and vegetable miso soup

A warm, gentle soup that's easy on small appetites.

Serves: 2 · Time: about 15 minutes

Ingredients

  • 3 cups low-sodium broth or water

  • 2 tablespoons miso paste

  • ½ block soft or medium tofu, cubed

  • 1 cup chopped spinach or bok choy

  • 2 green onions, sliced

  • Optional: a handful of cooked noodles or rice

Steps

  1. Bring the broth to a gentle simmer. Add the greens and cook for 2–3 minutes.

  2. Add the tofu and warm it through.

  3. Turn off the heat. Stir the miso into a little warm broth until smooth, then stir it back into the pot. Don’t boil after adding the miso.

  4. Top with green onions and serve.

Tip: miso is salty, so start with less if you're watching your sodium, and taste as you go. Add an egg for extra protein.
