Minced salmon with mashed potato and gravy

← Back to Resources

Level 5 · Minced & Moist: soft and moist with small lumps (no wider than 4 mm) that are easy to squash with your tongue. What do the levels mean?

Serves: 2 · Time: 30 minutes

Ingredients

  • 2 small salmon fillets, skin and bones removed

  • 2 medium potatoes, peeled

  • ½ cup milk and 1 tablespoon butter

  • ½ cup smooth gravy or white sauce

Steps

  1. Bake or poach the salmon until it flakes easily.

  2. Boil the potatoes until soft, then mash with milk and butter until smooth.

  3. Mash the salmon finely with a fork and mix in gravy until moist, with no pieces wider than 4 mm.

  4. Serve the salmon and potato side by side, with extra sauce. There should be no thin liquid pooling on the plate.

Check it: small lumps should pass easily between the prongs of a fork and squash with light pressure.
