Level 6 · Soft & Bite-Sized: tender pieces no bigger than 1.5 cm that mash easily with a fork. Some chewing is needed. What do the levels mean?
Serves: 4 · Time: 1 hour
Ingredients
1 lb boneless chicken thighs
2 carrots, 1 zucchini and 1 potato
3 cups low-sodium broth
1 tablespoon cornstarch mixed with 2 tablespoons water
Steps
Simmer the chicken and vegetables in the broth until very tender, about 40 minutes.
Lift everything out and cut into pieces no bigger than 1.5 cm.
Thicken the broth with the cornstarch mixture into a smooth gravy, then stir the pieces back in.
Check it: a piece should squash and break apart under a fork pressed until your thumbnail turns white, and not spring back. Serve with gravy, not thin broth, to avoid mixed thin and solid textures.
